Roasted Green Beans with Pecans

Fresh green beans are a perfect summertime veggie. They are healthy, tasty, and can be prepared in many different ways. They are also readily available at farmer’s markets. If you’re fortunate like us, you may even have a garden with green beans. Our two little rows of green beans have been super producers this year. We have been picking them by the gallon!

Though I love simple buttered green beans that have been steamed or boiled, it was time for something more exciting. This is where oven roasting and adding pecans come in! I am in love with the new result! One of my go-to techniques for simple and delicious veggies is oven roasting. Roasting vegetables at a high heat brings out their sweetness all thanks to caramelization, and makes them incredibly delicious. I often turn to brussels sprouts, various types of potatoes, onions, and carrots. However, green beans are another wonderful vegetable to roast in the oven. Almonds and green beans are a pretty classic pairing, but I wanted to switch things up a bit with pecans. They are probably my favorite nut if I had to choose!

For the green beans and pecans, I like to keep it simple in terms of flavor by adding just olive oil, salt, and coarsely ground black pepper. I am a bit of a purist for some foods. This allows the nuttiness of the pecans to stand out and the caramelized sweetness of the green beans. Even though this recipe contains no butter, this dish develops many buttery characteristics in the final product. You could certainly add other spices if you are looking to add more flavor. Garlic powder, paprika, or cumin would all be great additions.

As I write, I am already thinking about the fall and winter holidays. These green beans would be a beautiful addition to any Thanksgiving spread. The fresh flavors and vibrant colors makes for a healthier upgrade from green bean casserole. The green beans are tender but maintain a bit of crispness and the pecans are perfectly toasty. I hope you enjoy as much as we did!


Roasted Green Beans with Pecans


1 pound fresh green beans, trimmed

2 Tbsp extra virgin olive oil

1/2 cup chopped pecans

Salt and coarse ground black pepper, to taste

Preheat oven to 400° F. Line a large rimmed baking sheet with parchment paper. Arrange the green beans in a single layer on the pan and drizzle with olive oil. Season with salt and pepper to your liking. Bake for about 8 minutes.

Remove the pan from the oven and add the pecans. Toss the green beans to ensure even cooking. Return to oven and bake for an additional 7-10 minutes, or until green beans are tender and caramelized. Serve immediately.
