Chocolate Crispy Treats


Happy Earth Day! It seems as though spring has officially sprung in the Midwest. Even though I love the cold, it has been refreshing to have so much sunshine and be able to wear shorts!


As you may have already seen on my Instagram or Facebook page, this weekend has been a high mileage weekend of running for me (18 miles on Saturday plus an additional 6 miles this morning with my dear friend Lori). I am so blessed with her friendship! The sense of camaraderie among runners is like no other! During long runs, I think about many things but usually NOT food. However, for some reason these chocolate crispy treats came to mind on my run yesterday, and I knew I had to share the recipe on the blog.  

These treats are a cinch to throw together and have high appeal to children and adults alike! Though I LOVE the classic version, the cocoa flavor really hit the spot for me. Personally, I like my crispy treats on the gooey side, so my recipe uses a slightly lower cereal to marshmallow ratio than some (I mean, look at that marshmallow in the photo below)! If you are looking to make yours extra fancy, drizzle the bars with melted chocolate.


Whatever you’re doing today to celebrate Earth Day, these bars would be a great addition to the festivities! They are simple, fun, and very tasty!


Chocolate Crispy Treats


4 Tbsp butter, cubed

1 10-oz package mini or regular marshmallows

5 cups cocoa crisp rice cereal

½ cup semi-sweet chocolate chips (optional)


For thicker treats, grease the bottom and sides of a 9x9 inch pan with butter. A 9x13 inch pan will work also for thinner bars.


In a medium saucepan, combine the cubed butter and marshmallows. Heat on the stove over medium-low heat, stirring constantly, until the marshmallows are completely melted. The mixture should be smooth.


Remove from heat and quickly stir in the cereal until well combined and the cereal is completely coated. With a buttered spatula, press into a pan. Let cool.


If topping with a chocolate drizzle, melt the chocolate chips in the microwave and stir until smooth. Using a piping bag or sandwich sized storage bag, pipe a drizzle of chocolate over the bars. Let chocolate set before serving.
