Chocolate Chip Cookie Dough Cupcakes

Today is a wonderful day! Not only is it Friday (YAY),

it is also my sister Jolene’s birthday!


Happy birthday, JoJo!


Even though I am 326 miles away (according to Google maps), I am sending my love and warmest wishes to you for a beautiful year to come. I will look forward to celebrating with you in-person soon!


To those who know Jolene, you know she’s incredible. I may be biased, but I truly believe I was blessed with the greatest siblings—all 5 of them to be exact. Jolene has always been our fearless leader and set the bar really high! She excels in everything does, including her involvement in the community, musical performances, cooking and baking, and parenting to Brady. I must also add how beautiful she is—inside and out! Did I mention she's the best baker!? 

It only makes sense to share one of Jolene’s phenomenal cupcake recipes to celebrate her birthday! I envy her skills and talents—she is the cupcake queen! I think you will enjoy this one—it’s a favorite and for good reason. All of the masterpieces below were made by Jolene! 


Chocolate Chip Cookie Dough Cupcakes

Recipe from Jolene Messerly

Yields ~16 cupcakes


Cupcakes

1 cup granulated sugar

1 ¾ cups cake flour

1 ½ tsp baking powder

½ tsp baking soda

½ tsp salt

¼ cup (½ stick) butter, softened

2 eggs, room temperature

1/3 cup sour cream

¼ cup vegetable oil

1 Tbsp vanilla

2/3 cup whole milk

1 cup mini semi-sweet chocolate chips


Cookie Dough Frosting

1 cup (2 sticks) butter, softened

½ cup packed light brown sugar

½ tsp salt

2 tsp vanilla

2/3 cup all-purpose flour

2 Tbsp milk

2 1/3 cups powdered sugar


Garnish

Mini semi-sweet chocolate chips

Mini chocolate chip cookies (I recommend Trader Joe’s Crispy Crunchy Chocolate Chip Cookies)


Cupcake Directions

Preheat oven to 350° F. In a medium mixing bowl, combine cake flour, sugar, baking powder, baking soda, and salt. Add the softened butter and mix on medium-low speed with a mixer for a few minutes. It will be a fine-texture since there is little butter.


In a separate mixing bowl, whisk together the eggs, sour cream, oil, and vanilla until smooth. Add the egg mixture to the flour and mix just until combined. To this mixture, slowly add milk, and mix on low speed until combined. The batter will be runny.


Place cupcake liners in a muffin pan and fill liners just over half full with batter. There should be enough batter for about 16 cupcakes. Sprinkle tops evenly with mini chocolate chips. The chips will sink during baking. Bake for ~14 minutes or until a toothpick comes out clean.


Once baked, remove carefully from pans and let cool on a cooling rack. Let cool completely before frosting.


Cookie Dough Frosting Directions

Beat butter with an electric mixer for several minutes until light and fluffy. Mix in the brown sugar, salt, and vanilla. Scrape bowl and mix in flour. Lastly, add the milk followed by powdered sugar. Add additional milk if frosting is too thick.


Frost cupcakes with a piping bag and immediately sprinkle with additional mini chocolate chips. Garnish with a mini chocolate chip cookie just prior to serving.


Note: the frosting contains uncooked flour. If this is a concern to you, use an alternate frosting recipe or bake the flour prior to use.
