Apple Crisp Parfait
This parfait has all of the makings of an apple crisp minus the baking! It is also much healthier and easy to make. It has diced apple which is obviously the apple, crumbled BelVita biscuits and pecans as the “crisp” topping, and Greek yogurt which is like the ice cream on top. This is maybe a stretch, but the flavors are entirely reminiscent of apple crisp. For this recipe, I highly recommend leaving the peel on the apple. It not only adds color contrast, but it also provides more fiber! Fiber = fullness and healthy gut!
I know this is the second time I am using BelVita biscuits, but they are tasty, convenient, and contain whole grains. I have no affiliations with Mondelez, but I just like these crunchy biscuits. You could certainly use your favorite granola instead. It was my sisters who actually introduced them to me since they love the blueberry ones. I have never tried them, but I can already see the making of a blueberry muffin inspired parfait…
Snack bars can be polarizing and often get a bad rap. In many cases, they are essentially an oat-based or protein-fortified candy bar. There are some bars out there that have a beautiful nutritional profile but are practically inedible because they taste so bad. I won’t name products, but I am sure you have some ideas that come to mind. If something tastes terrible to you, I would advise not eating it. Instead, find something you do enjoy that still offers a nutritional benefit. Nutrition isn’t black and white, and making changes toward a healthier and sustainable lifestyle will help you in the long run. Prepacked convenience foods can be part of a balanced diet, which is what I am trying to show with these parfaits.

Apple Crisp Parfait
Feel free to adjust the ratios for you liking and nutrition needs.
1 medium apple, diced with peel on
3/4 cup plain whole fat Greek yogurt
2 cinnamon brown sugar BelVita biscuits, crumbled (save the remaining to enjoy at a later time)
2 Tbsp chopped pecans
Sprinkle of cinnamon
In a small stemless wineglass or bowl, layer the Greek yogurt, diced apple, and crumbled biscuits. Top with chopped pecans and a sprinkle of cinnamon.
